Prana Chai Rice Pudding

Prana Chai Rice Pudding

This deliciously moreish, spicy rice pudding is perfect for Autumn weather.

40g Prana chai tea

250ml boiling hot water

100g pudding rice

400ml coconut

50g coconut sugar

1 tsp vanilla essence

pinch of sea salt

 

Serves 4 

 

Steep the chai tea in boiling water for 15 mins – set aside

Rinse the rice well under cold running water

Place into a sauce pan

Add the coconut milk

Half fill the can with water and rinse and add to the milk and rice

Add the sugar, vanilla and salt

Strain the tea and add

Cook slowly on the hob until the rice is tender and the liquid absorbed

Approx 30mins

 

Serve with fresh figs, blackberry and coconut shavings and a drizzle of honey.
