Bee keeper, Toby Mason’s exquisite honey takes its flavour from the lime trees that populate Regent’s Park where he keeps his collection of hives.
Alongside the wonderful lime trees, Regent’s Park is the ideal nurturing ground for Toby’s breed of very gentle, New Zealand bees (famed for their mild temperament and so flown in especially to be ideal companions to the many thousands of visitors that come through the Royal Park each year).
Filled with a huge variety of nectar from flowers and trees for much of the year, it gives Toby’s honey a unique flavour-profile at different points in the calendar. Spring sees light liquid honey’s with lime and elderflower notes, Summer honey can take on the flavour of roses and later in the year it can become quite dark and spicy.
Much loved by honey enthusiasts wanting a real taste of London, and famed by hay fever sufferers seeking a natural remedy for their urban sniffles, its not a honey that stays on the shelves for long!
